Another year older

It's my birthday and I've got a present for you! Read on for one of my favorite dessert recipes - I don't make this one all that often but when I do, the fam is on the other side of the kitchen drooling with anticipation (and I mean the two-leggeds are slobbering just as much as the four-leggeds do anytime food is involved). I can't tell you how often I'll hear "are they ready yet?" when I'm whipping up a batch of these bitchin' blonde brownies!

First, some tips - wait until everyone has left the house to make these. I mean it because you will NOT want to share. Give yourself enough time to not only make these blonde brownies but also to hide the evidence, devour at least one and clean up the kitchen so those you live with are none the wiser!

These blonde brownies really hit the spot and are perfect for any occasion. Treat yourself - make some ASAP!

Bitchin' Blonde Brownies
Ingredients:

  • 1 cup vegan butter, softened (I like Earth Balance and Miyoko's best but use what you like!)

  • 1 cup organic brown sugar (light or dark - pick your poison!)

  • 1 tablespoon organic apple cider vinegar (sooo good for you)

  • 1 tablespoon vanilla extract (the best kind you can get - it makes all the difference)

  • 2 cups sifted flour

  • 1 cup Enjoy Life vegan chocolate chips (semi sweet or dark chocolate - dealer's choice)

  • 2 tablespoons vegan butter for the topping

  • 2 tablespoons water or almond milk

  • chopped nuts if you fancy

Directions:
Preheat your oven to 350 degrees. Line a medium square-sized pan with parchment paper. In a large mixing bowl, beat together 1 cup vegan butter and brown sugar until light and fluffy. Add the apple cider vinegar and vanilla and mix. Stir in flour until well blended. Pat mixture into baking pan, using wet hands if necessary to make an even layer. Bake about 25 minutes until golden and smelling delicious!

To make the topping, combine the 2 tablespoons of vegan butter and water or almond milk in a small pot. Add vegan chocolate chips and melt. Now, here's where you can get EXTRA! Feeling cray? Add some peanut butter. Melt over a low simmer, stirring until smooth. Spread this over your brownies and sprinkle with nuts if that's your thing. Chill until set and cut into bars. Cool and chill completely to harden.

This next part is VERY IMPORTANT! While brownies are chilling, clean up ALL EVIDENCE. Leave no trace of the decadent dessert you just made before anyone gets home. Once your brownies are ready, eat one and then hide the rest. Pick a really, really, really good hiding spot because these are just for you.
